Best Chocolate Chip Cookie Recipe Ever?

This chocolate chip cookie recipe from the prettily named Vanilla Bean Blog has just been sprinkled with internet fairy dust.

Sarah Kieffer is a self-taught baker who has won the Reader’s Choice Best Baking & Desserts in the SAVEUR Best Food Blog Awards.  Her cookbook The Vanilla Bean Baking Book is doing well enough to be sold out on Amazon (it’s available from Penguin Random House Canada here).

But it’s her chocolate chip cookie recipe that has the internet abuzz.

Innovations in chocolate chip cookies are unusual in the world of baking, but this recipe for big, flat, rippled chocolate chip cookies has one: the cookies are “pan-banged.”  According to the New York Times, this means pulling out the cookie sheet mid-bake and banging it hard on your stove or oven rack. This causes the cookie middle to collapse, pushing the close-to-raw dough out to the edges.  After repeating the process, a rim builds up that yields a soft and crunchy cookie.
