Le Trou cocktail will warm you right up by combining maple syrup, Calvados and cedar infusion.

- 2 dashes angostura bitters
- 1 egg white
- 1 oz thyme syrup
- Club soda
- Combine gin, clarified lime juice and thyme syrup in a collins glass with ice and stir.
- Top with club soda and garnish with thyme springs.
- *To make clarified lime juice, zest four limes into 500 ml of hot water and let steep for 30 minutes. Once steeped, add 4 tbsp of citric acid.
