International Beaver Day

It’s our national symbol, and as embedded in the Canadian psyche as is the maple leaf.  Because today is International Beaver Day, we wanted to share a little-known culinary tale about our furry friends…

Did you know that the Catholic Church recognized the beaver as a fish in the 17th century?  Since the semi-aquatic rodent was an excellent swimmer, the Bishop of Quebec asked the Church to declare the beaver a fish. This solved the big problem of what to eat on Fridays during Lent as the recently converted indigenous North Americans loved to eat beaver.
