Maple Syrup Season 2016

For people around the world, maple syrup is synonymous with Canada. We export our syrup to 50 countries and produce millions of pounds annually.

Who doesn’t love it – especially now that we know it has similar health benefits to berries, tea, red wine and flax  and may help to prevent Alzheimers?

As devotees, we were delighted to hear that the 2016 season was an outstanding one, yielding incredible flavour and clarity. To find out why, we checked in with Brian Herman, Chief Executive Officer at Quebec’s Turkey Hill.

Brian has been in the maple syrup business for 40 years, and according to him, 2016  was one of the most productive seasons he’s ever seen for quantity and flavour.

It didn’t look so promising back in February when unusually warm temperatures hit.  Concern grew to alarm when March followed suit.  But the return to cold temperatures in late spring resulted in an unusually long season, creating a perfect storm for an excellent year.  Apparently, it’s the cold to warm temperatures that create the pressure that drives the sap up the tree.  Without that, the sap doesn’t move in the tree, resulting in a woody flavour that taints the maple flavour.

What does this mean to maple syrup 2016’s taste? According to Brian, “Even a non-expert would be able to tell the difference in flavour.”
