IN NOVEMBER 2016, A FIRE SEVERELY DAMAGED THE WESTMOUNT BUILDING WHERE PARK IS LOCATED, FORCING THE RESTAURANT TO CLOSE.

Chef-owner Antonio Park took the opportunity to redesign his first establishment—he also own Jatoba and Lavanderia—and warm it up a bit. Now in the formerly austere room, panels on the walls and around the banquettes create more intimate spaces. The Japanese trained Korean-Argentinian chef still prepares highly precise Japanese-style cuisine: Park makes some the freshest and finest sushi, nigiri and sashimi in town.

The cooking is delicate, and much of it is highly original, often possessing an unusual cross-cultural inventiveness. Think Japanese-style raw fish with a robust Korean edge—and maple syrup. The best, albeit most expensive, option is to put yourself in Park’s hands and order an omakase at the back counter, where you can watch him work his magic. And don’t forget dessert. Famed pastry chef Bertrand Bazin, who used to work at 357c, has upped the game at Park with perfectly executed creations such as strawberry vacherin or coconut tapioca with mango sorbet and crunchy sweet potato vermicelli.
