Banana Flambés

INGREDIENTS
  • 8 bananas, not too ripe
  • 2 tbsp (30 ml) lemon juice
  • 1/2 cup (120 ml) pure maple syrup
  • 2 tbsp (30 ml) melted butter
  • 2 tbsp (30 ml) frozen orange juice
  • 1/4 tsp (1.25 ml) powdered cinnamon
  • 4 tbsp (60 ml) Coronet V.S.Q. brandy

METHOD
  1. Peel bananas and place in a shallow baking pan.
  2. Combine lemon juice, maple syrup, butter and orange juice, and pour over bananas.
  3. Sprinkle with cinnamon.
  4. Bake at 325 °F for 30 minutes, basting occasionally.
  5. Before serving, sprinkle with brandy and ignite. Serve flaming.
