People often talk about the “art of the bar,” but BarChef is the only place in Canada where the drinks are veritable installations. Take the Essence of Fall, made with balsam fir and served in a smoking woodlands diorama. The spectacle isn’t limited to the drinks. Owner Frankie Solarik puts on a riveting show, both behind his own bars (he recently opened Prequel) and as a judge on the Netflix series Drink Masters.
