Even in Vancouver, Botanists’ magical mushroom drink raises eyebrows—especially when Candy Cap Magic, a cocktail consisting of rye infused with a curiously maple- flavored fungus and local Bittered Sling aromatics, arrives in a smoke-filled glass terrarium, perched on a bed of fragrant moss. Perhaps it’s a bit twee for some classicists, but at Botanist, such bar-raising drinks emerge theatrically from a cocktail lab equipped with toys like a centrifuge, a rotovap, a dehydrator, and dry ice equipment. The ambition and inspiration behind the botany-inspired menu come from beverage director Grant Sceney (2014 Diageo World Class Canada champ) and opening head bartender David Wolowidnyk, the O.G. of Vancouver craft cocktails. Immaculate bar service from current head bartender Jeff Savage includes an “amuse booze” while your order germinates.
