Why You Need A Celery Manhattan
I was taught how to make a Manhattan by an older bartender who told me to pour a good dose of whisky in the glass and then add sweet vermouth until it turns a certain colour. No need to measure! For a long time, I thought he was just a lazy man with no love for his craft. But when I went to Harry’s New York Bar in Paris, the bartender— who was celebrating his 40th year of duty—made me a white lady with the same “precision.” I realized it was a style of bartending back in the day. — Jean-Felix Desfosses


Celery Manhattan


• 2 oz bourbon

• 3⁄4 oz Amaro Lucano

• 2 dashes Angostura bitters

• 10 drops Bittered Sling Cascade Celery bitters



Celery ribbons—shave celery lengthwise and let shavings rest in cold water for one hour, minimum, until they curl.



Stir ingredients over ice and strain into a chilled cocktail coupe. Garnish with half a celery shaving.
