Gin Citrus Punch

CALGARY’S PREMIER CRAFT COCKTAIL BAR has put an artisanal dent in the exploding ready-to-drink (RTD) market by teaming up with Confluence Distilling to create a line of canned elixirs made in small batches with fresh ingredients. When developing Proof ’s flagship Gin Citrus Punch, Reece Southern says he wanted to create a waste-reducing stock-style cordial packed with as much flavour as possible from the fruit. “The process of simmering the lemon and lime hulls back in their juices with sugar enabled us to pasteurize the syrup to increase the shelf life while adding an intriguing bitterness to this bold and refreshing beverage that we couldn’t wait to share with everyone.”

INGREDIENTS

  • 60ml (2oz) gin
  • 40 ml (11⁄2 oz) citrus punch stock*
  • 60ml (2oz) soda water
  • 1 strip grapefruit peel

GARNISH

• grapefruit rose

METHOD

Combine gin and citrus punch stock in a shaker with ice. Shake hard for 7 to 10 seconds. Strain into a Collins glass. Top with soda water and add fresh ice. Garnish with a twirled peel.

*Citrus Punch Stock

  • 250 ml (1 cup) lemon juice
  • 125 ml (1⁄2 cup) lime juice
  • 250 ml (1 cup) sugar
  • 250 ml (1 cup) lemon hulls
  • 125 ml (1⁄2 cup) lime hulls

Combine all ingredients in a large saucepan, bring to a boil and simmer for five minutes. Strain, cool and store in the fridge.
