Grapefruit + Rosemary Gin Cocktail With Ginger Ale

As we enjoy the final long weekend of Summer 2016, a horrifying realization lurks — Fall is  around the corner, and then dreaded Winter.  We suggest you head that dreary thought off at the pass with this refreshing Grapefruit + Rosemary Gin cocktail.

Created by award-winning bar impresario Ryan Chetiyawardana A.K.A Mr Lyan, whose bar Dandelyan at London’s Mondrian was recently awarded World’s Best Cocktail Menu 2016, this recipe for Grapefruit + Rosemary Gin cocktail is also heavenly minus the booze.

GRAPEFRUIT AND ROSEMARY GIN WITH GINGER ALE

3 grapefruits
100g/4oz sugar
2 sprigs rosemary
1 bottle London dry gin
Cubed ice
Chilled ginger ale, to finish
Grapefruit, to garnish
Zest the grapefruit using a peeler.
Add the peel along with the sugar, rosemary and gin to a large jar and stir until the sugar is dissolved.
Allow to infuse for a few hours (or up to a day), then strain through a sieve. Store in the fridge.
To serve, fill a highball with cubes of ice and add 2 shots of the infusion. Top with chilled ginger ale, stir and add a slice of grapefruit.
