John Higgins’ Royal Shortbread From Buckingham Palace

Chef John Higgins has cooked for the Queen at Buckingham Palace, on the Royal Yacht Britannia, for heads of state in Washington and celebrities around the world.

In honour of the Queen’s 90th birthday, here’s his shortbread recipe from his years as pastry chef at Buckingham Palace in the eighties.

Of her favourite shortbread cookies, Higgins says, “Taste is king, even for a Queen!”

Royal Shortbread from Buckingham Palace

Makes 16 cookies

Ingredients:

8 oz butter

4 oz icing sugar

4 oz corn starch

8 oz flour bread

Method: 

  1. Mix all ingredients together until it forms a dough-like consistency.
  2. Roll out to a ½ inch thickness and cut into circles or fingers.
  3. Place on a lightly greased cookie sheet and bake in a preheated oven 170C (350F) for 10-15 minutes.
  4. When golden in colour, remove from oven and sprinkle with granulated sugar and leave to cool on wire rack.
