The village of Le Bic, perched on the Southern shore of the St. Lawrence River some 300km north-east of Quebec City, is known for its quaint streets lined with brightly painted wood houses, spectacular views and the surrounding national park. And now also for chef Colombe St-Pierre, a mother of three who writes a local newspaper column about cooking local and respecting the regional terroir—just as she does with such inspiration in her eponymous restaurant. Her food appears simple but is highly sophisticated. Expect to eat locally reared meats, wild local fish and forage—as in suprême of Guinea hen with confit leg, celery root purée, pancetta and chanterelles. Or snow crab risotto with locally harvested ceps. Afterwards, enjoy local farmhouse cheeses, like Riopelle. The wood cottage setting of Chez St-Pierre is cozy, the service warm and professional, and the wine list is carefully selected and well explained.
