THE FOUNDING IDEA OF MILOS, BACK IN THE DAY, WAS FOR IT TO BE A SHOWCASE FOR THE OVERLOOKED COASTAL CUISINE OF GREECE, NAMELY BY PRESENTING THE FRESHEST AVAILABLE FISH IN THE SIMPLEST POSSIBLE WAY.
Originally, that fresh fish was sourced directly from the Fulton Fish Market in New York and driven to Montreal personally by owner Costas Spiliadis, the springs in his car failing under the weight of all that porgy, red mullet and sea bass. A few decades on, things have evolved some. Milos Montreal is Canada’s most successful high-end restaurant, with outposts in Manhattan, Athens, Las Vegas, Miami and London. The Montreal original has expanded, shed the corny Greek fishing nets dangling from the ceiling in favour of posh marble-lined bathrooms, and embraced foreign culinary novelties like tuna burgers and sashimi. But the core is, as always, the magnificent selection of fresh fish: John Dory, snapper, swordfish, lavraki (sea bass), lithrini (red bream) and, of course live lobster, exceptional shrimp, squid and plenty more.
You will find it all displayed on ice and sold by weight, and more often than not you will eat it grilled whole, dressed with nothing more than oregano, olive oil, lemon, salt and maybe some capers. The vegetables and side dishes are excellent, from the Greek salad to the zucchini ribbons with tzatziki and the grilled mushrooms. The place is a favourite for visiting film and entertainment industry people, and anyone else equipped with an enviable expense account.HOURSLunch
