THERE ARE MANY reasons for sitting up and paying attention to Winnipeg’s improving culinary scene—and Segovia is the strongest case in point.

Launched in 2009 by co-owners Adam Donnelly and Carolina Konrad, and named after the city an hour or so north of Madrid, the 40-odd-seat restaurant brings the tastes of Spain—along with some contemporary flair—to the Prairies. Chef Donnelly pays tribute to tradition with offerings such as thin-sliced jamón ibérico, patatas bravas, croquetas and tortillas espagñolas. But it’s the more contemporary tapas offerings that explain why you’ll find a lineup here on any given night of the week. Beets drizzled with fragrant berbere aioli and pumpkin-seed dukkah, butternut squash dumplings tossed in smoky harissa butter and topped with feathers of manchego melting tenderly on top showcase the chef’s ability to safely harness global flavours while remaining in the realm of tapas. The handsome restaurant includes both a rustic-accented brick-walled lounge and a dark and more contemporary dining room. A sound selection of Spanish wines completes the equation.
