This bijou offshoot of Burdock & Co. is all about the wine, but Vancouver is just as smitten with Neil Hillbrandt’s delightfully aromatic snacks, now available in heartier portions by popular demand. Andrea Carlson’s former sous-chef folds albacore tartare in preserved bergamot citrus, tops celeriac risotto with crushed walnuts, and spikes chocolate custard with minty hints of bay leaf. The latter, paired with a young, tingly J.J. Prüm Graacher Himmelreich, sent us home on a high note — and primed for our next visit for the 4D spatial sound experience, a cool date-night audio-sensory immersion engineered by nearby Lobe Studio.
