Peach Highball

Peach Highball

This recipe may take some time, but you’ll be thrilled with the results. A combination of fresh sous vide peach, black tea, cinnamon and thyme, this is the cocktail you didn’t know you needed.

RECIPE 

  • 50ml Johnnie Walker Black or Red Label
  • 50ml Peach Tea Cordial 
  • 100ml Chilled Soda Water

DIRECTIONS

  • Build over fresh cubed ice
  • Briefly stir and garnish with a cinnamon dusted peach slice

PEACH CORDIAL (MAKES 400ML)

INGREDIENTS

  • 250g Fresh peach slices
  • 20g Cinnamon Sticks
  • 2g Black Tea
  • 3g of Thyme (with stalks)
  • 500g Base Cordial

DIRECTIONS

  • Seal all ingredients in a vacuum packed bag, and cook sous vide at 60 degrees for 30 minutes
  • Strain through a super-bag into a clean bottle, seal and refrigerate
  • Store for 1 month

BASE CORDIAL

INGREDIENTS

  • 750g of Sugar
  • 750g Filtered Water
  • 10g Maldon Sea Salt
  • 15g Citric Acid
  • 15g Tartaric Acid
  • 15m Malic Acid

DIRECTIONS

  • Add all ingredients together
  • Stir until dissolved
  • Seal and refrigerate
