Beyond the Plate: Authentic Agrikol


Montreal’s Agrikol has been a favoured destination for authentic Caribbean/Haitian food for years.

Celebrity chef Paul Toussaint formerly fronted the Arcade Fire-owned Agrikol.  When new chef Hans Marckley took over the kitchen in the epicentre of the gay village last summer, there was nothing but sunny skies and smooth sailing ahead. Then the pandemic hit and two crippling shutdowns. Young chef Marckley has faced those challenges head-on with smiles, hopefulness and a great menu. His features Curry pumpkin with white rice (burned curry spice with coconut milk ), Griot and pressed plantain (pork shoulder braised for 4hrs with plantain), Poisson gros sel (braised red snapper in a mix of parsley, thyme, garlic and bell pepper puree) and shrimp popcorn with passion fruit dip.
