Hawksworth scholarship releases 2016 pantry list

The Hawksworth Young Chef Scholarship Foundation has released its pantry list of ingredients required to discover Canada’s next great culinary talent.

Canadian chefs, who are younger than 28-years-old and work full-time in a professional kitchen, are invited to enter the competition.

To enter, contestants are required to create a main course using the ingredients included in the pantry list. The recipe must serve four people and be prepared within two hours.

Throughout May, the competition will host regional heats in Vancouver, Calgary, Toronto and Montreal. In each heat, 10 young chefs will compete to create a main course using ingredients from the pantry list.

Chef David Hawksworth, namesake of the foundation, and Chef Kristian Eligh will select the regional heat competitors based on the following criteria:

  • A well-thought out, creative dish.
  • Use of common table ingredients (quality, not quantity).
  • Thoroughness of recipe package.
  • Accuracy of costing based on market prices.
  • Practical method and timeline of work.

The non-profit foundation was created to inspire Canada’s up and coming chefs, as well as promote professionalism and culinary excellence within the industry.

The winner of the competition receives $10,000 and a stage at a selected international restaurant.
