In a wooded cabin tucked into the forest on sleepy Galiano, Pilgrimme has offered a masterclass in using locally grown and foraged ingredients since 2014. Owner-chef Jesse McCleery’s seasonal tasting menu may feature such delights as a yellow pea tostada with albacore tuna and brassicas, or charcoal alkaline noodles with chicken fat and celery leaf.
