From a leader in organic and biodynamic viticulture in Niagara—and makers of top-end Pinot Noir and Chardonnay— comes this recent entry into the burgeoning Ontario craft spirits market.

And it’s delicious—just to get that out of the way, especially if you like a crisp on-the-rocks pour to take the edge off a long day (and before you get to the wine). The base is Riesling from the winery’s Limestone Ridge vineyard, steeped with 14 botanicals. At 18.5 per cent ABV, it’s dry, complex with fresh and dried herbs and white pepper, and fruity with pear and other tree fruit, and some light tropical elements. I will eventually try it in a martini…but no rush. $24
