“We’re a small neighbourhood restaurant, serving the food that we grew up eating. My brother Pablo and I wanted to open a restaurant together. He was living in Vancouver. And then I convinced him to move out here because unless you have crazy financial backing out West, it’s really hard to open up a place, and I really like cooking here and the people that come. Dining in Montreal—it’s like a completely different breed to the rest of Canada. It’s really a passion project.” —ARI SCHOR
