Terroir 2017

Terroir brings together innovative and creative influencers from the field of hospitality, including chefs, food and beverage experts, writers and business leaders.

To mark Canada’s 150th birthday, Terroir will honour our diverse culinary landscape and look at those  paving the way for the next 150 years with their panel “Canadians in a Foreign Land.”  Featuring hospitality industry expats who are creating names for themselves internationally, their stories on what it’s like to represent Canada on the world culinary stage will be moderated by Sarah Musgrave, Executive Editor of EnRoute.

Set to speak are:
Kyumin Hahn – Research and Development Chef, Kadeau, Denmark
A long-time advocate of farm to table cooking, Kyumin Hahn has worked with Michelin-recognized restaurants including Faviken Magasinet (Jamtland, Sweden) and Kadeau (Copenhagen) where he currently continues to carry forward his Canadian and Californian influences.
Nicolai Nørregaard – Head Chef and Partner, Chef, Kadeau, Denmark
Now working out of Bornholm and Copenhagen, Nicolai Nørregard has forever held a food-oriented loyalty to nature, having grown up with a Baltic Island family of producers specializing in homegrown produce and cuisine. In 2007, he opened Kadeau Bornholm, followed by Kadeau Copenhagen (2011), both of which hold Michelin stars.
Daniel Burns –  Chef/Owner/Author, Luksus, New York
A Michelin-accredited jet setter, Daniel Burns is chef and partner at both Tørst and Luskus (Greenpoint, Brooklyn). He was previously Head of R&D at New York’s Momofuku, before that he held positions at The Fat Duck and St. John (United Kingdom).
Hugh Acheson – Chef/Restaurateur/Author, Atlanta, Georgia
Acclaimed cookbook author and chef Hugh Acheson is the founder of Seed Life Skills, a not-for-profit organization with a curriculum dedicated to teaching real-life, retainable skills through lessons in cooking, economics, and design. He currently lives and works in Athens, Greece.

He says “I’m thrilled to be flying in from Athens to join the conversation at this year’s Terroir Symposium. I am especially looking forward to the privilege of being surrounded by and interacting with like-minded chefs, speakers, and influencers that all share a deep-rooted passion for Canadian gastronomy.”
