At his luxe Yorkville restaurant, chef Rob Rossi (Giulietta) explores Liguria, the birthplace of pesto and focaccia di recco. The region also boasts 350 kilometres of coastline. A starter of umami-rich Cetara anchovies, draped over whipped butter and grilled sourdough, leads perfectly to a luscious vitello tonnato. Pastas are equally exceptional, as are desserts.
