Civil Works’ Scroppino cocktail

“This is your welcome drink,” says Civil Works’ Nick Kennedy. “You put the sorbet in the glasses in the freezer, so all you have to do is add cold bubbly and hand out a super elegant, fun drink that everyone’s impressed with.”

The Scroppino

Makes 10 drinks.

INGREDIENTS


  • 1 L (4 cups) fruit sorbet (orange, peach or other)

  • 175 ml (¾ cup) Campari

  • 1 bottle chilled cava (or a little more, if needed)

METHOD


In advance, let sorbet sit until softened — 10 to 15 minutes. Transfer to a mixing bowl, add Campari and incorporate. Spoon the mixture into 10 flutes or small wineglasses. Put glasses in freezer. When guests arrive, top with chilled sparkling wine and serve with a teaspoon.
