C100B 2025 LIST DINNER SERIES: VANCOUVER’S BOTANIST

On Thursday, July 10, 2025, Botanist Chef Hector Laguna shares his kitchen with AnnaLena’s Mike Robbins and Cabaret l’Enfer’s Massimo Piedimonte for a one-of-a-kind dining experience.

Led by Executive Chef Hector Laguna and Chef de Cuisine Jayden Kresnyak, Botanist, a Canada’s 100 Best top-50 mainstay, will welcome Chef Mike Robbins of Michelin-starred AnnaLena (No. 10 on the 2025 C100B list) and Chef Massimo Piedimonte of Montreal’s acclaimed Cabaret l’Enfer. Each chef will contribute a course to the five-course dinner, ending with a seasonal dessert by Fairmont Pacific Rim’s award-winning executive pastry chef Kate Siegel. 

Hosted by Jacob Richler, the evening starts with a special reception at 6:00 p.m., featuring hors d’oeuvres and canapés from the chefs, champagne from Moet & Chandon, and cocktails from Botanist Bar and guest bartender Shawn Soole from Laowai. Dinner begins at 7:00 p.m. 

This night is a showcase for the imagination and finesse of some of Canada’s best chefs, the great seasonal Canadian ingredients available from coast to coast, and vintages from the private cellar of BC’s Phantom Creek Estates. Tickets are $350 per person, inclusive of wine pairings, gratuity, and tax.
