This bistro occupies the main floor of what was once the Darling Foundry, on the industrial flank of old Montreal—and the interior design mirrors the setting.Exposed brick, bare ducts and pipework, hard edges, simple lighting and vast expanses of old warehouse-style paned widows. The long bar is a sizeable expanse of marble. Lunch is bustling with the locally employed; and come nightfall, the crowd gets less business and more stylish. This is a different sort of bistro for Montreal—more Italian than French. There is a daily à la broche (spit-roast) option, which runs from Cornish game hens to veal ribs. But also, a trendy list of crudo, and innovative composed salads with a good range of textures and flavours—as with roast beets with pecans, parsnip chips and mandarin segments. Pastas are solid; even more so the hearty winter risottos—as with mushroom and shredded veal shank. As the team from Le Club Chasse et Pêche is behind them, desserts—by Masami Waki—are a strong point.
