Chef Scott Jaeger, Canada’s 2007 Bocuse d’Or representative, a seasoned member of the Canadian Culinary Olympic team and a mentor to many fine young chefs—is a modern classicist of the first order. His signature prawn cappuccino, served in dainty votive cups, is luxuriantly thick and foamy. Pastrami-spiced squab is newly hatched with sour brine and smoke. Even in the depths, his cooking tastes fresh and vibrant. It’s all plated with delicate artistry, served with poise and paired with an excellent selection of French and BC wines.
