With its recent facelift (finally) complete, the Fairmont Royal York now has a lobby bar befitting its stature. Sip from coupes dusted with fennel pollen as a gentle “pop” signals the opening of another bottle of bubbly—it might be Franciacorta, crémant or one of a half-dozen well-chosen Champagnes. This is the place to celebrate the golden era of cocktails, fizz and rail travel, and toss back a drink before hopping a train at Union Station across the street.
