Jonathan Gushue (Fogo Island Inn, Langdon Hall, Elora Mill) lands in Grey Highlands, two hours north of Toronto, to apply his masterful classical techniques to local seasonal ingredients. Dishes are deceptively minimal — red-wine-roasted chicken with smoked bacon and baby onion; or poached cod, lentil, parsnip and mustard nage. Everything is made in-house.
