The Best Bartenders Know What Goes into a Great Drink.
And What Doesn’t.

Oct. 06 2026

Canada’s 100 Best went behind the bar with four of the country’s best to talk cocktails, craft, hospitality and PATRÓN Tequila.

Andrew Whibley reaches for a cocktail shaker, fills it with ice and picks up a bottle of PATRÓN Añejo Tequila. The co-owner of Montréal’s Cloakroom is making The Summit, one of the bar’s signature cocktails.

“We spend a slightly unreasonable amount of time making our drinks feel effortless.”

The Summit starts with PATRÓN Añejo. “It’s additive free so the character of the tequila really comes through.” From there, Whibley builds the drink around citrus and agave. “It’s in the details, the balance and the technique. It’s the result of everything that happens before it ever reaches the pass.”

A great cocktail starts with the bartender: what they choose to pour, how they use it and where the idea came from in the first place. So Canada’s 100 Best went behind the bar with four of the country’s best to talk cocktails, craft, hospitality and PATRÓN Tequila.

The Perspective

Bar Numero | Montreal, Que.

At Toronto’s Bar Pompette, co-owner Jonathan Bauer has a similarly exacting view. “A great cocktail is all about balance. Nothing should be there without a reason.” That extends to his choice of PATRÓN: “It’s authentic, it has its own character and expression, and it allows other ingredients to shine.”

At Bar Numéro, inspiration often starts somewhere outside the bar altogether. “A lot of our inspiration at Bar Numéro comes from moments in real life,” says co-owner Alex Trahan. PATRÓN, he adds, “stays true to its agave flavour. It brings that raw tequila experience that allows us to create around it.”

And at Toronto’s Cry Baby, Rob Granicolo gets to the part that matters once the drink leaves the bartender’s hands. “The best part about being behind the bar is creating moments that bring people together.”

What he pours matters, too. “PATRÓN Tequila is additive-free in a world that’s kind of plastic.”

PATRÓN is made with just three natural ingredients: 100% Blue Weber Agave, water and yeast — no added sweeteners, colours or extracts. None of the artificial ingredients or additives that you do not want in your tequila or cocktail.

Different bartenders, different drinks, different reasons for what belongs in the glass. One thing they agree on? PATRÓN Tequila.
