Owner-chef Blair Lebsack and his partner Caitlin Fulton cut their teeth hosting outdoor farm dinners in the Edmonton area—and their first restaurant, Rge Rd, is a continuation of that same culinary mission. They embrace the full range of the local terroir; they are equally comfortable serving offal, as they are edible flowers. Both appear on a frequently changing menu as eclectic as their “barnpunk” surroundings—think pulleys, copper pipes, jam jars and a tiny country-style window that peers into the kitchen. Lake-caught walleye lolls in vivid green pea purée, while rich roast goose finds a balance with sunny apple slaw. “Questionable Bits” presents off-cuts and offal as legitimate menu items rather than as a dare. Dessert is neither deconstructed nor pretentious. The maple terrine packs an impressive stratum of rum jelly topped with maple cream and finished with crisp hazelnut streusel in a tiny Mason jar, while the apple tart whispers of a wood stove in a nearby farm kitchen.
