The concept at Humboldt bar revolves around a very tight theme. Nineteenth-century naturalist and explorer Alexander von Humboldt inspired almost everything — drinks, artwork, international sharing plates — in this wonderfully romantic bar led by Brant Porter. Take a seat at the corner-banquette “godfather seat” and prepare to be schooled. Concentrated Sunbeams gets its flavour from dripping through coffee grounds. The azure-tinted Cyanometer is named for the device Humboldt used to measure the darkest known shade of blue sky, on Ecuador’s Mount Chimborazo, in 1802.
