At this speakeasy, co-owners Eric Pan (formerly of London’s Kol) and Nick Hao (previously worked at Shanghai’s Sober Company) have created a moody, plush and mirrored room where the drinks are quizzical but delicious. Creations are formed in a basement laboratory, equipped with centrifuges, dehydrators and other mixologist toys. Drinks marry discordant ingredients: apple and lapsang souchong (in a Granny Smith and smoked-tea highball) or Parmesan and strawberry. Fans of culinary-inspired drinks can sip a blue cheese Martini or Tom Yum cocktail.
