Civil Works’ W.A.P.-tini cocktail

A rice wash is a relatively simple technique gaining popularity with bartenders because it smooths out bitterness.

W.A.P.-tini

Makes 10 drinks.

INGREDIENTS


  • 450 ml (2 cups) dry vermouth
  • 10 g (1 tbsp) dried jasmine flower
  • 450 ml (2 cups) top-quality pear-flavoured vodka, such as Grey Goose La Poire
  • 150 g (¾ cup) rice*
  • 10 pear spheres (for garnish)

*Sushi rice adds sweetness and creaminess, whereas jasmine and basmati add floral notes and a silky mouthfeel.

METHOD


In advance, combine vermouth and jasmine flower in a sealable non-reactive container and steep for 12 hours (but no longer). Strain into another container and set aside. Also in advance, combine vodka and rice and stir for 2 to 3 minutes. Strain through a coffee filter. Discard solids and bottle vodka.

Batch
Combine vermouth, vodka and 160 ml (⅔ cup) cold water in a mixing vessel and stir for about 45 seconds. Bottle and store in freezer.

Serve
Pour batched freezer martini into chilled martini glasses. Garnish with pear sphere.
