Great Canadian Getaways

Nimmo Bay

If your cottage experience does not quite measure up to your dream of quiet, exquisite seclusion and untamed, pristine landscapes, your next getaway should be here at Nimmo Bay, a small and ultra-exclusive float-plane-access resort on the B.C. coast at the foot of Mount Stephens, near Mackenzie Sound. This 100-percent sustainable, experiential destination has it all, from wellness treatments to a genuine taste of the wild, starting with guided foraging expeditions in your lush new backyard: the Southern Great Bear Rainforest.

Kat Florence Hotel

Fresh off a 14-year stint at Michelin-starred The Manor House Hotel, in Wiltshire, UK, pastry chef Marc Collyer has traded England’s idyllic Cotswolds for the bucolic village of Elora, Ontario. There, alongside chef Anthony Bish, he’s responsible for feeding guests at the bougie Kat Florence Hotel. The treats begin at breakfast, when a personal concierge delivers viennoiseries to your door. Though guests may choose to indulge in limitless tastings at the exclusive Infinity Patisserie, there’s dinner to consider. Hosted in Anthony’s restaurant, the meal reveals Bish’s affinity for local, seasonal fare. The blind tasting menu might feature plump lobster agnolotti with saffron white-wine cream or wobbly shoyu-braised short rib. Its cheekiest surprise? A nod to chef’s sideline as a pizzaiolo — chewy, blistered wood-fired pies made with Bish’s heritage-grain sourdough starter.

Leeward House

When it opens in July 2026, Leeward House, in Thornbury, Ontario, is intended to function as a design-driven base camp from which you can explore Grey County — or focus solely on relaxation. With just nine suites, the elegant, East Coast-inspired, neutral-hued haven will blend the homey feel of a cherished cottage with the covetable amenities of a luxe boutique hotel. Introverts will delight in spacious rooms with vaulted ceilings, each with a king bed, heated bathroom floor and a private patio, and many with a personal firepit. As for gregarious types? They’ll be drawn to the convivial lobby lounge. Outdoors, the property’s Nordic thermal cycle encourages year-round wellness, whether for après-ski soaks or summertime lounging.
