In the adjacent glass-fronted laboratory, maple-flavoured candy cap mushrooms are infused into bourbon for a B.C. riff on the Penicillin. In the mood for a divinely dry coastal experience? Try the Botanist Marine Martini: gin blend, house vermouth, kombu-spruce-tip distillate and a sprig of sea asparagus.
