This elegant turret room in the Fairmont Le Château Frontenac is where Winston Churchill kicked back with a Scotch and a cigar while strategizing the end of the Second World War during the Quebec Conferences. Fittingly, the whisky selection is vast, going way beyond Churchill’s beloved Johnnie Walker. Seasonal cocktails are inspired by literary legends and local authors, brought to life through the influence of local ingredients, such as maple gum, sea buckthorn shrub and wild root bitters. The circular brass bar offers majestic views of the St. Lawrence River.
