Barely six months old and Numéro — a drinks-centric space from the Entre-Deux team — has become a serious destination for gastronomic cocktails, served in a restrained modern brutalist space. Guests are seated on either side of the stainless steel bar, which positions bartenders within the flow of the room. Spirits and tools are out of sight, lights warm and low. Precision, innovation and technique anchor the bar program, evident in the Glow On, a force-carbonated highball comprised of Scotch, aquavit, cedar, fir and tonka bean. Martinis are poured tableside in frozen glasses, which are refreshed midway to maintain temperature. Science aside, Numéro takes its role as a neighbourhood bar seriously: A Labatt 50 sits as comfortably on the bar as any house cocktail.
