Good Thief transports you to the world of nhậu — the Vietnamese take on drinking and dining with friends, usually well into the wee hours of the morning. Brother-sister duo Vincent and Amelie Nguyen (they’re also behind Anh and Chi) have built a moody, buzzy cocktail bar with a meticulous drinks program focused on boldly Vietnamese flavours. Take the Phở Dặc Biệt, a boozy, Bearface whisky and junmai-sake-infused riff on beef noodle soup, finished with phở seasoning for an umami kick. Saigon Summer is a Toki highball with watermelon, Thai basil and edible makrut lime paint. The food menu is equally flavour-driven — from crispy frogs’ legs glazed with their famous savoury Vietnamese fish sauce to Dungeness crab garlic noodles — and meant to be served family-style.
