Montreal’s dynamic food scene attracts NYC charcuterie chef.

Charcuterie master Aurélien Dufour is poised to set up shop in Montreal this summer. After seven years in New York City as corporate charcutier for Daniel Boulud’s restaurant group, he ventured out on his own in 2017, launching Dufour Gourmet with his wife, Juliette, and brother Johannes.

Dedicated to crafting premium natural charcuterie with traditional French techniques, he sources locally, works seasonally and partners with farms that prioritize humane practices. His delicacies are crafted without artificial additives or shortcuts. The Montreal home rollout begins with an online platform, followed by retail locations before year’s end.

Born in Pessac, in Bordeaux, and raised in Germany, Dufour developed a precision-driven approach that earned him global recognition, including induction into the Académie Culinaire de France and a podium finish at the Pâté-Croûte World Championship.

Our partnerships with local producers are key, starting with the Gaspor Family Farm with whom we have been working for some time. They’re known for their exceptional procelet de lait, and this collaboration allows us to create fine charcuterie that truly honours the region. Aurélien Dufour

Dufour’s connection to Montreal runs deep. During his first visit in 2010 with Boulud, he became friends with some of the city’s celebrated chefs, including Normand Laprise, Martin Picard, and Charles-Antoine Crête.
