Mother

Barflies come to Mother for the culture — literally. The fermentation-focused cocktail menu, brought to life by 2022 World Class Canada Bartender of the Year Massimo Zitti, focuses heavily on cultured ingredients — kombuchas, lacto-ferments and other house-brewed potions. The Toasted Chai Piña Colada (which gains creaminess from caramelized yogurt and lacto-fermented pineapple and ginger) is a classic. Newer offerings include a Dirty Martini with house-made tomato distillate. The chiaroscuro-inspired decor and a minimalist backbar (take a peek at the barrel-aged Negronis resting) create polished modern vibes.

Tiger Stripe
The current menu, Mirror Mirror, is equal parts zero-proof and boozy.

Drink
Truffle Croissant, built from Islay Scotch, toasted chamomile, amaro, truffle and a croissant distillate.

Eat
Mother fires up some of the city’s best cocktail-adjacent food, including garlic-and-Parmesan fries and house-baked sourdough with miso butter.

Peep
The fermentation cellar is downstairs, where kombucha mothers are snoozing.
