Fairmont Royal York’s lobby bar is the place to celebrate the fizzy, golden era of cocktails and toss back a drink before hopping a train at Union Station across the street. Sip from coupes dusted with fennel pollen (from the hotel’s rooftop apiary) as a gentle “pop” signals the opening of another bottle of bubbly — it might be Franciacorta, crémant or one of a half-dozen well chosen champagnes.

Meet Me at the Clock, a French 75 riff made with gin, champagne, lemon and a (f)rosé ice sphere.
