Taking Saskatoon’s Paris of the Prairies moniker to the max, this highly francophilian wine bar boasts cozy bistro tables, generous portions of caviar and a wine menu flush with tiny family producers that make scant amounts of wine. Glasses here always contain something special — California co-ferments or vibrantly acidic pumpkin-hued skin-contact wines from Auvergne. Their repertoire extends to excellent icy martinis and crystal-clear milk punches

At happy hour, from 3 to 5 p.m., for two-buck oysters.
