Prophecy

The cavernous basement of Vancouver’s nearly century-old Hotel Georgia has been a Jazz Age cocktail bar, a techno club and even a Camelot-themed pub. The latest incarnation speaks to its future as a swanky, sexy cocktail bar with serious drinks, food and pedigree. Elegantly simple drinks belie the months of development and cocktail science applied by beverage director Jeff Savage (formerly of Botanist and Proof). Coloured brushstrokes on the menu pinpoint liquid moods, from Refreshing or Herbaceous to Lush (the rum, mezcal, banana and spice El Peregrino) and Spiritous (the exquisite Wabi Sabi Martini, made with redistilled matcha gin, aromatized wine and hinoki). On-trend Short Stories mini-cocktails include the Pocket Knife, a Batanga riff with house-made, on-tap Prophecy Kola. Order a $100 A5 Wagyu Katsu Sando (worth every bite), listen to some live music and watch the digital art on the walls change. If this is a vision for the future, we’re here for it.
