Proof

With nearly nine years of shaking and stirring under its belt, Proof has cemented its place as one of Calgary’s most iconic bars. Evocative of classic American cocktail lounges, the focus is on service and spirits, as evidenced by the ceiling-height backbar — complete with library-style ladder — and an extensive, inventive cocktail menu organized by spirit. Classics are certainly on offer, and discounted heavily at happy hour, but Proof shines when it plays with atypical offerings: a bright and earthy Beet Beneath has clove-infused Cointreau, Thai basil and beet-lemon cordial. Connoisseurs casting their eye up to the top shelf or reading through the secret Full Moon menu of classic cocktails made with high-end spirits (these drinks run from $35 to $80) will note some real rarities, like, say, 23-year-old Pappy. But the relaxed vibe and laid-back staff make enthusiasts and novices alike feel welcome.

Drink
Fire in the Pharmacy, a smoky, citrusy highball of mezcal and peated Scotch with honey, lemon and ginger — the only holdover from the original menu.
