According to local lore, this elegant turret room in the Fairmont Le Château Frontenac is where Winston Churchill strategized the end of the Second World War, Scotch and cigar in hand. These days, the setting remains as refined as ever, although the whisky list stretches far beyond Churchill’s beloved Johnnie Walker. Seasonal cocktails are inspired by literary legends and Canadian authors, brought to life through the influence of local ingredients, such as maple gum and verjus from Île d’Orléans. The circular brass bar offers majestic views of the St. Lawrence River.

Drink
Apple Pie, an ode to author Jack Kerouac. It’s a whisky-sherry Julep with a spritz of sparkling apple must.

Mixed boards of artisanal Quebec cheese and charcuterie.
