It’s the place to go for sherry, vermouth, amaro and further-world fortified wines, alongside smart low-ABV and spirit-free cocktails. Sip them by the glass, like the Nouvelle Saison, composed of tequila, Calvados, rosé, Nonino amaro and a savoury kick of red cabbage. Dishes are built to pair well with sherry, wine and the like — Spanish tortilla and pan con tomate with boquerones and umami-rich Gildas.
