Since opening in April of last year, June has become one of buzziest seats in Vancouver, beloved for its sexy red-tinted room designed by Mexico City’s Héctor Esrawe, its bordering-on-perfection cocktail list and the decadent, comforting French bistro-style food. Take, for example, the Pasta for Rachel (named for head chef Connor Sperling’s wife), which comes as a sheet of pasta with pockets, each filled with Comté cheese, and sprinkled with black pepper and topped with a generous dollop of Normandy butter that oozes all over the plate. On the drinks side is the Noisette Manhattan, a rich riff on the classic, with browned-butter Suntory, vermouth, Calvados and Champagne gomme. Keefer Bar geniuses Cameron Watt and Keenan Hood joined forces with Sperling, general manager Leticia Castro and bar manager Satoshi Yonemori to create a place worthy of a trek to sleepy Cambie Village past 5 p.m.
