This wine bar has all the trappings of a Parisienne boîte — caviar service, artisanal cheeses, oysters shucked to order and a wine list flush with small-scale producers. The catch: it’s in the Paris of the Prairies, Saskatoon. Nevertheless, francophilian flights of odd and entrancing natural wines always feature something special. Think natty co-ferments, vibrantly acidic, pumpkin-hued skin-contact wines from the Okanagan Valley and other gems that have travelled from far and beyond. The cocktail repertoire runs from excellent icy Martinis to crystal-clear milk punches.
